Spinach is a life saver for those who are going the frugal living route. Not only is it cheap to grow, it is also idiot proof. Trust me. I grew a whole vegetable patch full from 6 little seedlings. It fed me all summer and especially those last few days before payday. i made everything from spanakopita to spinach pizza. For the last bit of the spinach i made a big pot of spinach soup. This is a nourishing soup which freezes beautifully.

Large bunch of spinach
1/2 onion, chopped
60 ml butter or margarine
60 ml flour
500ml vegetable stock
500 ml milk
Nutmeg, salt and pepper to season

  • wash the spinach well and tear into strips (don't shake the water off)
  • wilt the spinach in a pot for 2 min and set aside.
  • fry the onion in the butter and when soft, add flour
  • Add the vegetable stock, stirring continously. Almost like you're making a white sauce but with stock instead.
  • let it thicken a bit.
  • add the milk, spinach and seasoning
  • bring to the boil again and cook for 2 or so minutes
  • take off the stove and let cool a bit.
  • when its cool enough, blitz in a food processor and return to pot to reheat.

Well, this is my very first post in my very first blog ever. As a single thirty something who is busy working on building my career, fixing up my new place, learning to live frugally and trying to be as organic as possible, life is pretty interesting. Just the other day my car decided to roll down the (very steep) driveway because i forgot to put the car in gear. I hope to include some tutorials on DIY, recipes and sewing on this blog.
